Sesame oil is not particularly rich in omega-3 fatty acids, but it is high in
unsaturated fatty acids such as oleic (35-54%) and linoleic (30-50%), as they
represent over 80% of the total fatty acids. Of the saturated fatty acids in the most
significant amounts are palmitic (9–13%) and stearic (5–10%) acids, together
they make up less than 20% of total fatty acids. The health effects of
sesame oil is mainly associated with the high content of oleic acid (C18:1),
which can lower LDL cholesterol and raise the level of HDL in the blood, helping to
