2. PREPARATION OF SOURDOUGH or PROBIOTIC MILK
1. Preparation of the device:
Carefully wash the stainless steel bowl and its lid with warm water and make sure that there is no dirt that could compromise the fermentation process. It is advisable to wash and sanitize all other containers you handle, as well as your hands.
Be careful not to get the housing of the device wet!
2. Selection of raw materials and starter cultures
To prepare sourdough or probiotic milk, you can use different raw materials, and it is important to be convinced of their quality (homemade, farm, and also high-quality pasteurized fresh milk from the store, as well as soy milk, can be fermented). For starter you can use:
1 capsule Probiotic Maximus (open 1 capsule and pour the contents without the shell into the fresh milk);
starter for yogurt (according to the instructions);
from already made yogurt, or high-quality yogurt from the store, natural without additives (50 g yogurt / per 1 liter of fresh milk).
3.Preparation of sourdough or probiotic milk
Boil 1 liter of milk (over 90°)
Cool the milk to 40-45° (if you don't have a thermometer, you can test with your finger, it should be hot, but tolerable temperature for your finger)
Pour about 50-100 ml of fresh milk into a small container and add the selected starter.
Stir well until completely dissolved and mix with the boiled and cooled milk already to 40-45°.
Pour the contents into the bowl of the device and close tightly with the small lid, then place the bowl with the milk in the device and close with the large lid. Both lids must be kept closed during the entire preparation time to prevent contamination.
Plug the device into the power supply and it starts working immediately.
The fermentation time is usually between 7 and 12 hours.
4. Unplug the appliance after the fermentation time has passed.
Remove the bowl with the finished milk and place it in the refrigerator (with the small lid, without stirring).
3. STORAGE
You can consume the finished yogurt after at least 4-5 hours in the refrigerator. We recommend consuming it within 3 days of its preparation to enjoy the maximum activity of the probiotic bacteria. The milk is suitable for use and storage for up to 10 days in the refrigerator.
Note:
A. After it is fermented, the yogurt should be milky white or light yellow, without large pores, unpleasant odor and taste. If the fermented milk is not smooth and has bubbles and mold, it is contaminated with various bacteria and is unfit for consumption.
B. If the milk is left to ferment for a longer period of time, it is normal for it to release a white-yellow sour liquid (zwick), which is rich in lactic acid and vitamin B. The zwick can be drunk alone or mixed with milk.
C. The degree of fermentation directly affects the taste of the yogurt, so it is recommended to control the preparation time within 7-8 hours in summer and 10-12 hours in winter (if the room is cool).
D. If the appliance is not turned off after these 12 hours, it is possible that the milk will have a more sour taste and a sour liquid (zwick) will appear.
E. After the milk has cooled down well, you can move it to another container with a lid.
F. If after the preparation process of 7-12 hours, the milk has not soured and there is no mold or unpleasant smell and taste, you can cool it and consume it in the next 2-3 days as a milk-sour drink. The most common reasons for this are poor-quality fresh milk, incorrect temperature during fermentation or contamination of the container.
G. If you use yogurt for fermentation, you can use the old yogurt as a fermentation starter up to 3 times in a row, due to bacterial degeneration.
3. SAFETY TIPS:
Before using the appliance, check whether the operating voltage of the appliance corresponds to the mains voltage.
Do not use the appliance near flammable objects.
Do not touch the plug with wet hands due to the risk of electric shock.
The body of the appliance must not be wetted or cleaned with water.
The appliance cannot be disassembled and its parts cannot be repaired independently.
Do not use the appliance on unstable, wet or other surfaces that are close to heat sources, as this could damage it.
Store the appliance out of the reach of children.
5. CLEANING AND MAINTENANCE
After use, the appliance should be unplugged and cleaned after it has cooled down.
Regularly clean the appliance after each use to avoid unpleasant odors.
Do not clean the appliance with solvents, aggressive cleaning agents and abrasives.
Do not wet the appliance housing. Use a soft, damp cloth.
Do not wash the appliance bowl and lids in the dishwasher.
If the product is not used for a long time, place it in its transport packaging and store it in a dry and ventilated place until its next use.
