Adzuki beans with cherry tomatoes, mushrooms and spinach

Adzuki beans are easy to cook. When cooking it is necessary to follow a few simple rules, valid when cooking Bulgarian beans:
Rinse the azuki bean and soak it in water for eight hours.
Then squeeze it and wash under running water.
In the pot in which you will boil it, pour water in a ratio of 1 to 3 - for 1 cup of beans 3 cups of water.
After the water boils, simmer for 45-50 minutes or until soft.
Add salt after it softens.
Cooked azuki beans are easy to include in a variety of salads, dishes and desserts. Store in the refrigerator for up to 3-4 days.

Azuki beans are equally suitable for sweet and savory dishes. In Japan and China, it is popular as an ingredient in many of their traditional pastries, but also in soups, rice dishes, pâtés and more. Azuki can be cooked like Bulgarian beans, it is not inferior in taste, but it has one big advantage - it is easy to digest. We offer you a recipe suitable for a family dinner. It cooks quickly, you only need to have boiled azuki beans in your fridge.

Necessary products

400 grams of cooked azuki beans
2 tablespoons olive oil
2 large cloves garlic (cut into flakes)
220 grams of cherry tomatoes (cut into quarters)
200 mushrooms (thinly sliced)
1/2 teaspoon paprika
1 teaspoon dried basil
1 teaspoon dried oregano
300 g spinach (finely chopped)
fresh parsley for sprinkling (chopped)
100 grated hard cheese to sprinkle

Preparation:

Heat a large skillet with olive oil and garlic over medium heat for a minute until the garlic begins to fry. Add the chopped cherry tomatoes and mushrooms, red pepper, oregano, dried basil, chili. Cook for about 5 minutes, until vegetables are tender. Stir to avoid burning. Add the tomato puree. If the mixture is dry, pour a few tablespoons of boiling water or broth. Then add the finely chopped spinach and wait for it to soften.
Finally add the cooked azuki beans and half a glass of water or broth and stir. Leave the dish on low heat until the liquid evaporates. Sprinkle with grated cheese and parsley.
