Bees create this wonderful honey not with the sweet nectar gathered by the colors but with another sweet substance - the manna, which is the sweet juice produced by the trees attacked by aphids. The aphids feed on this juice because of the amino acids it contains, not so much for sugars. So, most of the sugars are explanted from the lice as honey - a natural waste product that is appealing to bees. This resin is chemically different than nectar, so honey is also chemically different from regular honey. It has a higher mineral content, with special benefits and highly valued by honey lovers.

          Characteristics of Organic Forest Honey:
          Fragrance: woody, slightly resinous, with different notes, depending on the type of wood
